Calamares en salsa

  • ½ kg squid, cleaned
  • 2 onions
  • 2 carrots
  • ½ kg spinach
  • ½ bunch of parsley
  • ½ bunch of celery
  • 2 garlic cloves
  • 1 litre can of peeled tomatoes
  • olive oil
  • salt, pepper

Finely chop the onions and carrots, thoroughly wash the spinach, cut the leafy part of the herbs, and chop the garlic cloves. Fry all this in 2 tablespoons of olive oil. Clean the squids, or have them cleaned, and cut them in rings if you like. Put them in a strainer and pour boiling water over them. Add the squids and the peeled tomatoes with their juice to the stew, bring to boiling and stew for 30 - 45 minutes. Add salt and pepper to flavour.
