Boquerones Malagueños

  • 1 kg anchovies, real fresh
  • ¼ kg flour
  • ½ litre olive oil
  • salt

Málaga is famous for its pescaítos fritos, fried fish. This is a simple recipe for anchovy Málaga style. If you can't find fresh anchovies, you can substitute them for almost any other kind of small fish, especially sardines.

Clean the fish, sprinkle with salt, then hold half a dozen at a time fanwise at their tails, in a manojito, and dredge them in flour.

Fry them in abundant, very hot oil en serve immediately, since freshly fried and warm is when they taste best.
