Cooking Andalucian style

When coming from the north of Europe, your first view of the average Andalucian country house kitchen may come as a bit of a shock. If the house has not yet been brought up to modern standards, the kitchen will be one of the rooms to show it most obviously. It's like stepping into a time warp. There will be a sink of some description and a tap, but no hot water. Most likely, the room will be dominated by a huge chimney, that can easily take up an entire side of the room. This is where home-made sausages were hung up to dry and to smoke.

It goes without saying that these antiquated kitchens need modernising, but modernising with respect for old age. Bring in some modern comfort, but don't let it loose its charm. The Andalucian cuisine, as a result, is plain and unpretentious, yet the subtle use of spices, the quality of ingredients and the sometimes surprising combinations make it one to savour.
